When my insulin tried to ruin my life....

Two things I’ve missed are pancakes and crepes…. sad face! Imagine my delight when I found a grain free crepe recipe in Dr. Gott’s, No Flour, No Sugar Cookbook.  I got this book from the library and have found a few favorites that I will post.  some I have modified, but this one was perfect from the beginning.

2 eggs

3/4 c skim milk

6 Tbs arrowroot powder or flour

1 tsp baking powder

dash of salt

1 Tbs olive oil

cooking spray

In bowl, beat eggs about 2 minutes with electric mixer on medium speed until pale yellow and fluffy.  Add in remaining ingredients and mix until well blended.

Coat 12″ skillet with cooking spray and warm over medium-low heat.  Add 2 Tbs of mixture to hot skillet and swirl to evenly coat bottom.  Cook until lightly browned (in a properly heated pan, crepe will take seconds to brown)…
